Cumin vs black cumin

Black cumin (kala jeera) is not nigella (kalonji), and it is not caraway. Check the botanical name on the guide.

Smaller, darker seeds than common cumin; used in biryani and rich gravies.

Flavour and kitchen job

Regular cumin is the everyday tadka seed. Black cumin is finer, more floral, used more sparingly in some North Indian and Kashmiri cooking.

When to use which

  • Everyday jeera for tadka and rice.
  • Black cumin when a Kashmiri or specialty recipe names it.

Do not substitute nigella for black cumin — different plant, different flavour.
