Black pepper is fruity-pungent, the Malabar staple. White pepper is muskier, used where black specks are unwanted or in some Chinese and cream sauces.
When to use which
- Black pepper in Kerala pepper chicken, rasam, and everyday seasoning.
- White pepper in pale sauces or recipes that specify it.
For Indian cooking, start with whole black pepper and crush as needed.
