Rajasthan spices
Rajasthan is cumin, coriander and chilli country — dry heat, sandy soils and the mandis that still set the tone for North Indian everyday masala.
Jeera from the western belt and coriander seed from adjoining growing districts are traded through Unjha and other markets. Grade, sieve size and oil content matter more than a state name on a brochure.
Rajasthani kitchens lean on cumin tadka, red chilli, and coriander in laal maas, ker sangri and dal baati. Toast jeera until it smells nutty, not burnt.
These spices are commonly associated with Rajasthan. That is a regional story, not a guarantee that every bag on this site is from that state. Country of origin and region on the pack must follow the lot.
- Cumin — Warm, earthy seed spice central to Indian tadka, rice, and masalas.
- Coriander — Citrusy seed, whole or ground; distinct from fresh coriander leaf.
- Fenugreek — Bitter-maple seeds and dried leaves (kasuri methi).
- Fennel seed — Sweet anise-like seeds used as spice and mukhwas.
- Mustard seed — Black, brown, or yellow seeds for tadka and pickles. Allergen: mustard.
- Nigella — Small black seeds (kalonji), not black cumin.
- Ajwain — Thyme-like, pungent carom seeds.
- White poppy seed — White poppy seed (posto / khus khus) for thickening gravies.
- Sesame seed — White or black sesame. Allergen: sesame.
- Anise seed — True aniseed, smaller and different from fennel saunf.
- Dill seed — Dried dill seed for pickles and some dals.
- Dried mint — Dried mint for raita, chaat, and some rice dishes.
- Dried garlic — Dehydrated garlic flakes or powder.
- Dried red chilli (generic Indian) — Generic dried red chilli when a named cultivar is not specified.
- Mathania chilli — Named Indian chilli cultivar: Mathania chilli.
- Dhani chilli — Named Indian chilli cultivar: Dhani chilli.
- Longi chilli — Named Indian chilli cultivar: Longi chilli.
