Turmeric vs saffron for colour

Turmeric stains food yellow-orange and costs little. Saffron is the dried stigma of Crocus sativus and is one of the most expensive culinary spices. Using turmeric ‘instead of saffron’ changes the dish.

Flavour and kitchen job

Turmeric is earthy and slightly bitter; it is a curry backbone, not a floral finish. Saffron is honey-hay aroma in tiny doses.

When to use which

  • Turmeric in dal, curry bases, mustard tadka rice, and marinades.
  • Saffron in biryani, phirni, and rich rice — bloom threads in warm milk first.
